I’m thrilled to invite you on my cultural tour of Pike Place Market! While many visitors flock to see the flying fish, locals and I cherish the market for its unique creative spirit and deep-rooted connection to Seattle's vibrant art and music scene. Come join me, a lifelong performing artist who practically grew up in this iconic market, for an intimate experience that weaves together music, art, and personal storytelling. • After meeting up at the famous wishing pig, we'll visit the mural featuring legendary artists like Artis the Spoonman and my father, Ron Bailey. I've got the inside scoop on the unique history and incredible stories that I'm so excited to share! You'll also get to hear about and from the local makers and artists whose booths fill the market. • I’ll take you to all the spots where buskers bring art to life, with incredible performers that do everything from playing upright pianos to juggling knives while spinning hoops. Don’t forget to bring some dollar bills if you'd like to tip this world class talent! • After sampling snacks from some of my favorite vendors, we’ll wrap up our tour at the stunning new rooftop garden, which has breathtaking views of Puget Sound and the Olympic Mountains. We'll start out at my house for espresso & homemade whole-grain toast that uses locally-grown and milled flour. Next we'll get to mixing and baking your own loaves. You will leave with a vigorous sourdough starter, plus a loaf of whole-grain, naturally-leavened bread. Not only that, but you'll have the knowledge to go home and start making your own bread regularly! While we wait for your bread to rise, we'll visit some of Portland's best bakeries. This is a lesson and tour in one. Check out @1000bitesofbread on Instagram. Other things to note Arrange transportation to and from my house, but I will provide complimentary transportation to the bakeries we will visit. We'll have breakfast together and there will be plenty of snacks.

In the time we'll spend together, we'll be making fresh dough, starting from the basics: eggs, flour and salt. Then we'll roll it out and fill it to create beautiful pasta that will wow your guests at your next dinner party! If you are a party of one, please inquire before booking, as you will enjoy it best with others. If you don't see a time that works for you, look for the "creative ravioli" experience to see if any spots are available there, or contact me directly on here and we can try to find a solution! Please inquire BEFORE bokking, in case of GLUTEN intolerance, as the ENTIRE party will have to be Gluten-free (best for private parties). It is not possible to offer both at the same time. Other things to note At the end of the class, you'll be able to cook what you make and eat it there! Bring a camera, your enthusiasm and willingness to learn! Cannot accommodate gluten-intolerance, sorry! For private groups, please account for each guest when you make the booking. Urban Foraging on Capitol Hill

Learn how to identify edible native and invasive plants in the Pacific Northwest. Starting at Black Hole Sun in Volunteer park, I will guide you through one of the prettiest neighborhoods in the city. I'll teach you about best practices in foraging, acknowledge the indigenous stewards of the land, and help you identify some of the most common plants that you can harvest on your own. Along the way, we'll talk about the unusual geology that makes Seattle what it is, spy on street cats, and cover some of Seattle's strangest history. Every attendees leaves this trip with a handful (or more!) of something wonderful we've found along the way. Depending on the season, it could be fir tips, feral apples, herbs, flowers, or nuts. While I am not an herbalist, chef, or doctor, I'm happy to share ideas for preparing what you find, and traditional uses for herbs we come across.

Seattle Delicious Donut Adventure by Underground Donut Tour

Take a donut tour of the Emerald City, and discover the best Seattle has to offer. At each location, you will taste a curated sample of the best donuts. Some of the stops on this downtown tour include Top Pot Doughnuts, Dahlia Bakery, and Daily Dozen Doughnuts, all of which are authentic donut institutions. This 2-hour walking tour is led by a passionate donut expert, who will guide you to some of Seattle's best donut locales. The tour can cater to all size groups, both large and small. The donut tour is great for bachelor and bachelorette parties, birthdays, family reunions, weekend getaways, or even corporate events.

Specialty Coffee Roasting Class with a Roastmaster

We will start out with coffee and a snack of some type for you and one guest. I'll walk you through the life cycle of the coffee bean - from Seed to Cup. Giving you a look at the backside of the coffee . Farming decisions, Milling, Export, Import, Storage. Everything up to Roasting. (aprox 1 hr) Then we'll move out to my small roasting studio and get my roaster up to temp as I give you the basics of roasting science, the differences in drum vs air roasting, and help you pick through my current green bean inventory to select the beans you'll roast for yourself. We will then spend about 2 hours hands on roasting, blending and bagging 10 pounds of coffee for you to take home. (if you send me a digital image ahead of time, we can put your own label on your bags) When we are done roasting, we'll take up to 3 different roasts back inside and do a professional coffee cupping, followed by a "Brew Science" talk/presentation. (aprox 1 hr) By the end of our day you should understand why coffee is the second largest traded commodity on the planet, how and where its grown, differences in milling methods, differences in roasting methods, and the basics of brewing science. Other things to note Send a digital image days before you arrive for custom labels. You can add extra pounds for $10/lb to your finish roasted coffee. We can also bag your creations by the pound or half pound.

Let's make gnocchi!

In our time together you'll learn how to make the traditional potato gnocchi dough, and another one (non potato-based) that is less known but just as delicious. You will eat what you make and will be able to take all the recipes home. If you are a party of one, please inquire before booking, as you will enjoy it best with others. Mushroom Foraging

We will stroll along forest trails, often in old growth conifers, enjoying the sights and sounds of the forest. In the fall, a wealth of mushrooms fruit in the evergreen forests of the Pacific Northwest. We will encounter many species and study them in their native environment. We may return with delicious edible mushrooms, but my goals for this experience are to introduce you to the fascinating study of mushrooms, and provide you with a foundation for safe mushroom foraging during a memorable forest visit. We will meet at Haggen Market in Olympia and forage in nearby prime productive habitat. Foraging for mushrooms is quite different and more relaxed than hiking to a destination. The moment we enter the forest, we will be at our destination! I have hosted this experience based in Seattle for several years and now offer it based in Olympia where there is superb foraging habitat.

Mad Scientist Drink Fusion Lab, A Mocktail Focused Workshop

lab·o·ra·to·ry | \ ˈla-b(ə-)rə-ˌtȯr-ē Definition, broadly : a place providing opportunity for experimentation, observation, or practice in a field of study. Unconventional workshop; not a class. This is an ever-changing and high concept drink fusion playground (aka. laboratory) for those with 0 to 100 levels of experience. This particular lab is experimenting with non-alcoholic drinks, aka. mocktails. For those who prefer alcohol and/or cocktail lessons, please see the other lab I host: the 'Mad Scientist Cocktail + Mocktail lab". This particular drink fusion laboratory allows us to more easily accommodate ages under 21, and focus on fun alternative libations to liquor, wine and beer. I will begin the lab by introducing you to all the tools and ingredients available. Multiple printed recipes will offer a starting point, and as you take off on your own concocting direction, I will be present to offer guidance and answer questions. By design, any awkwardness and negative judgement is kicked out the door in order for the madness to ensue! Curiosity is MOST welcome in this class: please ask away.
