Soba—gluten-free buckwheat noodles—is the soul food of Tokyo natives. There is a huge difference in taste between 100% handmade soba and what comes from a factory. I have more than 20 years experience as a soba chef at Yabu Soba, which has been in business for almost two centuries. In this Soba tasting event, I'll demonstrate the craft of making 100% buckwheat noodles which requires extreme skills to make. You are more than welcome to try to make if you'd like to. If you just want to watch, that's fine as well. I'll show you all the process, secrets and explain the history of soba noodles in Japan. I’ll show you a trick to turn store-bought sauce into restaurant quality one as well. Before you taste soba noodles, I'll cook popular appetizers such as "Dashimaki" rolled omelets, "Miso-yaki" roasted seasonal vegetables with house-made miso, “Sobagaki” buckwheat dumpling, and Wagyu beef sukiyaki. If you are vegan or vegetarians, then I’ll prepare customized dishes for you. Please let me know in advance. You will experience the Tokyo style soba noodles food culture in this event in a private setting. Please bring your curiosity and appetite!
I was born in a family with a soba restaurant and mastered my skill at Suginami Yabu Soba, which has been in business in downtown Tokyo since the Edo era almost 200 years ago. I'd like to share the world of soba with people from different cultures. Soba has been kept secret to foreigners until now, unlike ramen and udon. Be one of the first to explore this hidden food culture.
