Henry Hoare's (as of Stourhead fame) magnificent folly, which can be seen from Maesdown Hill.
Although the tower isn't currently open, there are some fantastic walks in the surrounding woods.
Just a cautionary note: there have periodically been thieves breaking into cars parked in the car park, so PLEASE don't leave any valuables in view, or even hidden in the boot.

Shepton Mallet prison aka Cornhill, closed in 2013 but is steeped in history dating back to 1610. It has accommodated, amongst so many others, American soldiers, the Doomsday Book and the Kray twins. The tour guides are second-to-none, and are more than willing to show you the chilling Execution Room.
